Serves: 2

1 sweet potato thinly sliced

Salt (to taste)

Pepper (to taste)

Olive oil

One pouch of our simmering sauces (we used the Green Enchilada)

For toppings:

Cooked Shredded chicken

Sunny side up eggs

Pomegranate seeds

Onion slices

Chopped fresh cilantro

1- Toss your potato slices with salt, pepper, and olive oil.

2- To make the chips in the AIR FRYER method, place them in a single layer and air fry at 400F for 6 minutes per side. Depending on the size of your air fryer, you might have to do multiple batches.

If you are using the OVEN METHOD:

  •    Preheat oven at 400F
  •     Line a baking sheet with parchment paper and single layer your         potato slices.
  • Bake for 12 minutes per side.

3- In a large size pan, add the Green Enchilada sauce and bring it to simmer. If you wish to top this dish with eggs, this would be a great time to make them in a separate pan.

4- Once the sauce comes to temperature, turn off the heat, and toss in your potato chips. Making sure all of them coat them in the sauce.

5- Remove the dish from the stove, and add the toppings. We did eggs, shredded chicken, pomegranate seeds, avocado, and onion slices.
