Chilaquiles with Sweet Potato chips

Toss your chips with one of our simmering sauces (Green, Red, or Mole) then finish the dish by adding eggs, chicken, and your favorite garnishes. Brunch doesn't get any more healthy and delicious than this!
Ingredients:
1 sweet potato thinly sliced
Salt (to taste)
Pepper (to taste)
Olive oil
One pouch of our simmering sauces (we used the Green Enchilada)
For toppings:
Cooked Shredded chicken
Sunny side up eggs
Avocado
Pomegranate seeds
Onion slices
Chopped fresh cilantro
Instructions:
TOSS your potato slices with salt, pepper, and olive oil.
AIR-FRY method- place them in a single layer and air fry at 400F for 6 minutes per side. Depending on the size of your air fryer, you might have to do multiple batches.
Oven Method:
PREHEAT oven at 400F.
LINE a baking sheet with parchment paper and single layer your potato slices.
BAKE for 12 minutes per side.
ADD the Green Enchilada sauce in a large sized pan and bring it to simmer. If you wish to top this dish with eggs, this would be a great time to make them in a separate pan.
TURN OFF the heat once temperature is reached, and toss in your potato chips. Make sure all of them coat them in the sauce.
REMOVE the dish from the stove, and add the toppings. We did eggs, shredded chicken, pomegranate seeds, avocado, and onion slices.
