Enchiladas with Egg Tortillas

Makes: 6 egg "tortillas"


4 eggs

1/4 cup of water

dash of salt

For the filling: 

1 full chicken breast shredded

1 pouch of Saucy Lips Foods mexican sauces (Mole, Green, or Red Enchilada


You'll need:

8 inch pan non-stick with a lid

cooking spray



1- Preheat oven to 350 F

2- Add your eggs, water, and salt to a bowl and mix. 

3- Heat your non-stick pan to medium heat.

4-Spay the pan with your preferred cooking oil and add a thin layer of the egg mixture. Cover right away and leave it covered for 40 seconds. 

5- Transfer the egg wrap to a plate and repeat step number four until you run out of the egg mixture.

6- Assemble your enchiladas by rolling 2 tbsp of chicken into each of the egg wraps. 

7- Cover the egg wraps with one pouch of Saucy Lips Foods Mexican simmering sauces and bake at 350 for 15 minutes. 

8- Add your favorite toppings and Enjoy!
