8-10 flour tortillas
2 cups cooked, shredded chicken
1 pouch of Green Enchilada sauce
2 cups shredded cheese
Oil for cooking
Toppings: Guacamole, Sour cream, chopped fresh cilantro, chopped onions.
MIX together the shredded chicken and the Green Enchilada sauce until the chicken is evenly coated.
HEAT a nonstick skillet over medium heat.
ADD a splash of oil to the skillet.
ADD flour tortilla to the skillet and toast on both sides (about 15-20 seconds)
TOP with some shredded cheese and the green enchilada chicken mixture.
FOLD the tortilla in half and cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
REPEAT with the remaining tortillas, cheese, and green enchilada chicken mixture.
