Ingredients
1 lb chicken breasts (cut in half lengthwise)
2 tsp olive oil
1/4 cup of our Tangy Mango sauce for marinating the chicken.
6 cups romaine lettuce chopped
1/2 cup cherry tomatoes, halved
1/2 english cucumber, sliced
1 avocado cut in cube
1/2 red onion, thinly sliced
1/4 cup cilantro, chopped
Mango Vinaigrette Dressing:
1/2 cup extra virgin olive oil
3 Tbsp our Tangy Mango sauce
Salt and Pepper to taste
Instructions
MARINADE chicken breast with 1/4 cup of our Tangy Mango sauce, Olive oil, Slat and Pepper. Set aside for 15 min while you chop the rest of your salad ingredients.
SAUTE chicken in 2 tsp olive oil over medium high heat until browned and cooked through (3 min per side). Remove from pan, cool for 5 minutes then slice into strips against the grain.
COMBINE in a bowl the Mango Vinaigrette ingredients.
ADD to a bowl the chopped romaine, cherry tomatoes, sliced cucumber, avocado, onion, and cilantro. Top with the slices of chicken and drizzle the Mango vinaigrette over it.
