    Chicken Enchilada Casserole

    Dig in to this heavenly Enchilada Casserole made with our Red Enchilada simmering sauce! This quick recipe takes 15 minutes to make from start to finish! 


    2 tbsp of olive oil 

    1 pound of cooked chicken shredded

    Salt and pepper to taste

    1 pouch of our red enchilada sauce 

    10 tortillas cut in strips 

    1 cup of shredded cheese 

    To Serve: 

    half an onion (diced)

    chopped cilantro 

    1 avocado mashed 

    sour cream



    HEAT your pan with oil to medium high heat.

    ADD your chicken with salt and pepper and sauté for 2 min. 

    MIX in the Red Enchilada sauce with the chicken and add the tortilla strips. 

    MIX to combine the three ingredients until the tortilla strips absorb most of the sauce. 

    TOP with cheese and cover for 8 minutes or until the cheese melts. 

    ADD all your toppings and serve warm!
