Beef Fajita Stuffed Sweet Potato

INGREDIENTS 

1 1/2 pound of Beef round bottom cut in cubes 

1 cup of water 

dash of salt and pepper 

1 pouch of Saucy Lips Fajita sauce

4 sweet potatoes washed and poked 

Toppings: 

Sour cream, onions, cilantro 

 

INSTRUCTIONS

PREHEAT oven at 425 F

SEASON your beef with salt and pepper

ADD your meat to the pressure cooker and the cup of water. 

PRESSURE cook for 45 minutes on high

BAKE your sweet potatoes

PULL meat apart with two forks 

REMOVE excess water and add the fajita simmering pouch

PRESSURE cook for another 2 minutes 

CUT your sweet potatoes in halves 

TOP the potatoes with the meat and the fresh toppings!
