Thai Salmon Tacos with Cashew Butter

Ingredients
1 pound of salmon (skinless)
6 jicama tortillas
For the Sauce:
- 1 Tbsp of Georgia Grinders Cashew Butter
- 4Tbsp of Saucy Lips Pineapple Thai Sauce
- 2 Tbsp of water
For toppings:
- Sesame seeds
- Sliced scallions
- sliced mandarins
Instructions
1- Preheat oven to 450˚F and line your baking sheet with non-stick parchment paper. Cut your salmon into 4 portions and place on the baking sheet.
2- In a medium sized bowl, whisk together all the sauce ingredients and brush each salmon on both sides with the sauce.
3- Place the baking sheet inside the pre-heated oven to bake for 12- 15 minutes.
3- Once the salmon is cooked, cut in slices and assemble your Jicama wraps.
4- Add the toppings for some extra flavor!
