Ingredients
*For the Instant Pot Chicken carnitas
1.5 LB of skinless chicken thighs
4 Tbsp of Zesty Cilantro
2 limes (juice)
4 crushed garlic cloves
1/2 teaspoon of salt
1.2 teaspoon of pepper
2 bay leaves
*Zesty Fajita Veggies
2 tbsp of Olive oil
1/2 an onion thinly sliced
2 bell peppers thinly sliced
1 tbsp of Zesty Cilantro
* Guacamole
2 large avocados mashed
1 tbsp of Zesty Cilantro
*Cilantro Lime Cauliflower rice
1 bag of frozen cauliflower rice
2 Tbsp of Zesty Cilantro
Instructions
Instructions for the IP Chicken carnitas
1-Add all your ingredients to the Instant pot and pressure cook for 15 min.
2-Shred your chicken and if you want a crispy finish transfer to a baking sheet and broil for 5 min.
Instructions for the Fajita veggies
1- In a large skillet over medium-high heat, heat oil. Add the peppers and cook for about a minute stirring occasionally. Add the onions the Tbsp of Zesty Cilantro and sauté for another 3 minutes or until your veggies are softened but still tender crisp.
Instructions for the Guacamole
1-Mash your avocados and mix with the sauce. If you are making a bigger batch just season with the sauce accordingly.
Instructions for the Cilantro Lime Rice
1- Cook your cauliflower rice according the instructions on the package. Once ready, add the two Tbsp of Zesty Cilantro.
