Chicken Skewers with Creamy Cilantro Sauce
Serves 4. Try this deliciously saucy Mexican twist on classic chicken skewers. These creamy and delicious chicken skewers will have everyone at the table feeling satisfied and enjoy the perfect Whole30 meal. Image and recipe by Natalia Dalton from Saucy Lips!
2 lbs boneless skinless chicken thighs, cut into 1-inch cubes
2 tbsp Saucy Lips Zesty Cilantro Sauce
1/2 tsp fine sea salt
1/4 tsp ground black pepper
2 tbsp of Olive oil
Freshly chopped cilantro leaves
For the creamy cilantro sauce,
1/2 cup unsweetened coconut milk
1/4 cup of our Zesty Cilantro sauce
1/4 teaspoon fine sea salt
TOSS chicken thighs with 2 tbsp of Saucy Lips Zesty Cilantro Sauce, juice of 2 limes, sea salt, and black pepper. Set aside under refrigeration for about 30 minutes.
PREHEAT oven to 450 degrees F.
THREAD chicken cubes onto the skewers and place them on a baking sheet. Drizzle with olive oil.
BAKE chicken skewers for 15 min at 450 degrees F.
SWITCH oven to broil and broil chicken until browned (2-3 minutes).
While the chicken is baking,
COOK mixture of coconut milk, Zesty Cilantro Sauce, and sea salt in a small saucepan over low heat.
REMOVE chicken skewers from oven and serve.
TOP skewers with the creamy cilantro sauce.
GARNISH with fresh cilantro
