    Vegan Burger and Skillet Potatoes with Vegan Aoli

    This easy and simple vegan meal will surely hit the spot!!

    Vegan Burger and Skillet Potatoes with Vegan Aoli:
    Main Ingredients:

    • 1 Vegan Burger Patty
    • 2 Leaves of Red Leaf Lettuce
    • 2 Red Potatoes (diced)
    • 1/2 Red Bell Pepper
    • 4-6 Grape Tomatoes (sliced)
    • 1/2 Tbsp Chopped Red Onion
    • 1/2 tsp Smoked Paprika
    • 2 Cloves (chopped) Garlic
    • 2 Tbsp Avocado Oil (or another high heat safe oil)
    • 1 tsp Chopped Fresh Parsley
    • Pinch of Pink Himalayan Sea Salt & Ground Black Pepper

    Vegan Spicy Aoli Ingredients:

    • 2 Tbsp Vegan Mayo
    • 3 Tbsp Saucy Lips Habanero and Carrot hot sauce
    • 2 tsp Coconut Aminos
    • 1/2 tsp Garlic Powder
    • 1/2 tsp Onion Powder
    • Pinch of Pink Himalayan Sea Salt & Ground Black Pepper

    Directions:

    • Heat a medium pan over medium/high heat with the avocado oil.
    • Add chopped garlic, red potatoes smoked paprika, salt, and pepper.
    • Let potatoes cook for (stirring occasionally) for ~15 mins or until potatoes are tender and crispy.
    • In a small pan, heat vegan burger patty according to packaged directions.
    • For the aoli, combine all ingredients until well mixed and set aside.
    • Plate everything up with the fresh veggies, then drizzle the vegan aoli and sprinkle with parsley to finish it off.
