Tangy Mango Mashed Cauliflower & Baked Cod

Sweeten up your veggie sides with this creative take on mashed cauliflower! 

Recipe type: Lunch, Dinner 

Serves: 1 (can easily double) 

Ingredients 

  • 1 cup orange cauliflower 
  • 2 tbsp. Tangy Mango sauce 
  • 4 oz Atlantic cod 
  •  2oz asparagus 
  • ½ cup cherry tomatoes, sliced 
  • Sesame seeds 

Instructions 

  1. Place cod and asparagus on a baking sheet with a sprinkle of sea salt and bake at 400 degrees F for about 12 minutes 
  2. While fish is baking, boil cauliflower until fork tender 
  3. Place cauliflower and tangy mango sauce in a blender and puree (or mash by hand) 
  4. Serve fish on top of cauliflower with asparagus and tomatoes on the side 
  5. Finish off with a sprinkle of sesame seeds
