This recipe is so easy and perfect for loading with toppings! Tacos de papa (potato stuffed tacos) is a Mexican classic and now you can make these at home too with our super quick recipe.
Ingredients:
3 potatoes
2 Tbsp of our Zesty Cilantro sauce
1/4 teaspoon of salt
1/4 teaspoon of pepper
16-18 tortillas
Instructions:
1- Boil your potatoes until they are soft to mash. (We slice our potatoes in 2 inch rounds and throw them in the instant pot to pressure cook for 13 min) Once your potatoes are ready, mash them and add the salt, pepper, and our Zesty cilantro sauce.
2- Place your tortillas in a kitchen cloth and warm in the microwave for 40 seconds. Once these are warm we can start assembling the tacos.
3- Spread about 2 tbsp of the mashed potatoes onto one side of the torilla and fold ( similar to what a quesadilla would look like) repeat this step until you have all your tortillas stuffed.
4- In a large pan, add your favorite oil for frying and heat over medium, heat. Once hot, start adding the tacos in batches. Each taco should take about two min per side to become golden and crispy. Once ready, place the tacos in a plate lined with paper towels so it helps absorb some of the extra oil.
5- Once you got all your tacos ready, transfer them to a serving dish and load with toppings! We love adding diced tomatoes, lettuce, queso fresco, sour cream and lots of hot sauce!
