Ingredients
* 4-6 ounces grass fed strip steak
* ½ cup brussel sprouts
* 1 medium sweet potato sliced into wedges
* 1 tbs ghee
* 3 tbsp zesty cilantro dressing
* sea salt, to taste
Instructions
1. Preheat oven to 425 degrees F
2. Toss brussels and sweet potatoes with ghee
3. Season with salt & pepper
4. Place sweet potatoes on lined baking sheet and bake for 20 minutes
5. Remove from the oven and add brussel sprouts
6. Return to the oven and bake for an additional 20 minutes
7. While veggies are cooking, heat your grill and cook steak as desired
8. Slice steak, plate veggies and serve with zesty cilantro sauce for dipping
