Shrimp Ceviche Nachos

Keep it FRESH with this appetizer! This citrusy ceviche served Nacho platter style is perfect for a game-day watch party. The best way to serve this dish is by mixing mayo with our Zesty Cilantro sauce for the perfect drizzle topping!

SERVINGS 4-6

Ingredients

1 pound of Raw Extra Large Shrimp peeled and deveined (20-25)

Juice of 5-6 limes

1/2 onion diced

2 Roma tomatoes cut in small cubes

1 cucumber cut in small cubes

1 large avocado cut in cubes

4 Tbsp of Zesty Cilantro 

1/2 tsp of salt

1/4 tsp of pepper

1 bag of shredded lettuce

1 bag of your favorite tortilla chips

Fresh cilantro for garnish

For the Mayo: 

4 tbsp of Mayo

2 Tbsp of Zesty Cilantro

 

Instructions

CUT your shrimp in small pieces and add to a bowl

SQUEEZE all the limes and add to the shrimp. You want to make sure the shrimp is submerged on the lime juice so it cooks evenly. 

ADD your onions, tomatoes, avocado, the Zesty Cilantro sauce, salt and pepper. 

MARINATE this dish for at least 20 min to make sure the shrimp is cooked by the lime juice, if you are not serving right away, refrigerate until serving. 

MAKE the cilantro mayo by mixing 2 Tbsp of Zesty Cilantro with mayo. 

ASSEMBLE your nachos. Place the bag of chips at the bottom of a serving dish, top it with the shredded lettuce, ceviche, the cilantro mayo, and some fresh cilantro for garnish.
