Roll up Taquitos

These crispy Rolled up Taquitos are a favorite at our household. We like to add our Zesty cilantro sauce to your choice of protein to bring the flavor to the next level. They can be baked or fried, both methods work great as long as you load these with your favorite toppings! 

 

Serves: 4 (about 16 tacos)

*Cooking time varies depending on choice of protein & cooking method (15 min-40 min) 

Ingredients For the Chicken Version: 

4 cooked and shredded chicken breasts (can sub for a whole shredded rotisserie chicken)

3 tbsp of Zesty Cilantro (or more if needed) 

*optional one cup of shredded cheese

 

Ingredients for the Veggie Version

1/2 a bell pepper chopped

1/2 onion chopped

1 container of mushrooms thinly sliced 

1/2 cup of corn 

3 tbsp of Zesty Cilantro sauce (or more if needed)

*optional one cup of shredded cheese 

 

Ingredients for the Cilantro Avocado Salsa:

1 Large avocado

1/4 of a cup of water

1/4 tsp of salt

1/4 tsp of pepper

3 TBSP of zesty Cilantro

 

For Cooking: 

a pack of corn tortillas (16-20)

Oil for frying or cooking spray for the baking method. 

 

For Serving: 

top them with shredded lettuce, tomatoes, the Cilantro avocado salsa, some hot sauce, and even shredded cheese! 

 

Instructions 

1- For the Veggie Version: add your veggies to a hot pan with cooking oil. Add them in the following order: Bell peppers, onions, mushrooms, then lastly the corn. Sauté for about 5 minutes then add the Zesty Cilantro and mix throughly while cooking for another minute or two. 

2- For the Chicken Version: add your cooked and shredded chicken to a bowl and mix with the 2-3 TBSP of Zesty Cilantro sauce.

3- For the Frying methodAdd about 1 1/2 inches of oil to a skillet and heat to medium.

4- For the Baking method: Preheat your oven at 350 F and spray your baking sheet. 

4- Warm up your Tortillas: Place your tortillas in a cloth napkin and heat them up in the microwave for 40 seconds. You need the tortillas to be warm in order for rolling cause otherwise they will break. 

5- Roll the tacos: spoon your choice of protein into a line at one end of a tortilla, you can sprinkle some cheese and tightly roll it up. Place the tacos seam down to prevent them from unrolling (you can also secure them with a toothpick) Repeat this process until you have all your tacos rolled up. 

6- For Frying the Tacos: place your tacos seam down in the hot oil for about a minute. This seals the taco and prevents it from opening. Then proceed to cook on all the sides until they are all golden and crispy. We do this in batches. Place the tacos that are ready on a paper towel lined plate.

7- For Baking the Tacos:place all your rolled up tacos seam down in the greased baking sheet. Spray the tacos and bake for 20-25 minutes. 

8- If you are making the Avocado cilantro salsajust blend all the salsa ingredients together.

Top your tacos with lettuce, tomato, the Avocado Cilantro salsa, hot sauce and cheese!
