    Queso Fundido with Chorizo and Jalapeño

    Queso Fundido is the perfect side dish to serve at any taco Fiesta! This stringy melted cheese is so easy to make and perfect to be scooped up onto a tortilla to enjoy. Add our Jalapeño Green apple sauce to the chorizo to give this classic a twist that everyone will enjoy. 


    4 ounces Mexican Chorizo casings removed.

    2 teaspoons of our Jalapeño Green apple sauce 

    1 can of refried beans

    12 ounces of Oaxaca Cheese (one ball) or Monterrey Cheese. 



    PREHEAT oven to 350 degrees. To cook the chorizo, place a skillet over medium heat, and add the chorizo. Cook for 5 min, stirring frequently. Add the Jalapeño Green Apple sauce to the chorizo and cook for another minute. remove any excess fat and set aside. 

    ADD the can of beans to the bottom of your cast iron or oven proof dish and spread evenly.

    ADD your cheese topped by the chorizo to a small cast iron or oven proof dish and bake for 10 minutes. 

    SET the oven to the broil setting and broil for another 2-3 minutes or until the cheese is melted and bubbling. The best is when the cheese starts getting some brown spots, but don't over cook it or it will become chewy. 

    REMOVE form oven and enjoy with some warm tortillas! This dish needs to be enjoyed while hot. As it cools down, the cheese becomes hard to scoop. If this occurs, insert back in the oven and broil for another two minutes to reheat.
