Pumpkin Mustard Pork Tenderloin Breakfast Plate

 

Power up for the day with a protein packed, fall breakfast dish. This pork tenderloin works well for any meal of the day. Swap the toast for sweet potato toast to make this whole30 compliant. 

 Recipe type: Breakfast 

Serves: 4 

Ingredients 

  • pork tenderloin 
  • ½ - ¾ cup pumpkin mustard + more for serving, if desired 
  • Sides as desired (Shown here: avocado toast, steamed green beans, raspberries and scrambled eggs) 

Instructions 

  1. Preheat oven to 400 degrees 
  2. Place pork tenderloin on a lined baking sheet 
  3. Cover with pumpkin mustard 
  4. Bake for 35-45 minutes or until no longer pink in the center* 
  5. Serve with your favorite fall sides and additional pumpkin mustard 

*Cooking time will vary depending on the size of your tenderloin
