Pumpkin Mustard Pork Tenderloin Breakfast Plate

1 pork tenderloin
- ½ - ¾ cup pumpkin mustard + more for serving, if desired
Sides as desired (Shown here: avocado toast, steamed green beans, raspberries and scrambled eggs)
Preheat oven to 400 degrees
Place pork tenderloin on a lined baking sheet
Cover with pumpkin mustard
Bake for 35-45 minutes or until no longer pink in the center*
Serve with your favorite fall sides and additional pumpkin mustard
*Cooking time will vary depending on the size of your tenderloin
