Get ready for a tropical twist on classic shrimp tacos! Our Pineapple Thai sauce adds a sweet and savory kick to this crowd-pleasing dish. With just a few simple ingredients, you can create a flavorful meal that will transport your taste buds to the Yucatan Peninsula of Mexico, where our journey began.
Ingredients
1 lb. shrimp, peeled and deveined, tails removed
2 TBSP of Pineapple Thai sauce
1 tsp of paprika
1 tsp of garlic powder
For the Pico de Gallo salsa
1 avocado cut in small cubes
3 rings of pineapple cut in small cubes
chopped cilantro
1 lime (juice)
salt and pepper to taste
For serving Mayo, & warm tortillas
Instructions
TOSS the shrimp in a bowl with the Pineapple Thaisauce, the paprika, and the garlic powder.
HEAT a large skillet with a drizzle of oil over medium-high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, until the shrimp are cooked through.
MAKE the pico de gallo by mixing the diced avocado, pineapple, and chopped cilantro. Season with lime, salt, and pepper.
ASSEMBLE the tacos. Place the mayo on the tortilla, add 3-4 pieces of the cooked shrimp and top with the Pico de Gallo.
