Mexican Street Corn Salad with a Zesty Dressing

Don't be the person who brings a boring salad to the party – bring our Mexican Street Corn salad instead! Trust us, your friends will thank you. This salad is BURSTING with flavor, from the charred corn to the tangy lime dressing and the best part is, it takes minutes to put together! 


4 ears of corn, husked (or a large bag of frozen corn)

1/2 red onion, diced

1 jalapeño pepper, seeded and minced

1/2 cup crumbled cotija cheese

1/4 cup chopped fresh cilantro

For the dressing:

2 tablespoons mayonnaise

1 tablespoon sour cream

3 TBSP of our Zesty Cilantro Sauce 

Juice of 1 lime

Salt and pepper to taste


PREHEAT your grill to medium-high heat.

BRUSH the ears of corn with a little bit of oil and place them on the grill.

COOK the corn, turning occasionally, until it's charred on all sides, about 10-12 minutes. if using corn from a can bag, sauté until it becomes lightly charred.

REMOVE the corn from the grill and let it cool slightly.

CUT the kernels off the cob and place them in a large mixing bowl.

ADD the diced red onion, minced jalapeño pepper, crumbled cotija cheese, and chopped fresh cilantro to the bowl.

MAKE the dressing, whisk together the mayonnaise, sour cream, lime juice, and our Zesty Cilantro sauce.

DRIZZLE the dressing over the corn salad and toss to coat!

CHILL the salad in the refrigerator for at least 30 minutes before serving.
