Delight in the irresistible blend of flavors found in this Mexican street corn pasta salad. Grilled corn takes the spotlight, accompanied by a Zesty chile-lime dressing and a sprinkle of cheese. Experience the authentic taste of Mexican street corn in this delectable pasta salad, where every forkful is a fiesta of flavors.


3-4 ears corn on the cob

1 tablespoon olive oil

8 ounces pasta (macaroni, rotini, or bowtie)

1/2 red onion chopped

1/2 cup Cotija or Quest fresco cheese, crumbled

chopped fresh cilantro

Salt and pepper, to taste

1/4 cup mayonnaise

1/4 cup of our Zesty Cilantro sauce

1 teaspoon chile powder

lime juice ( 1 lime) 


PREHEAT your grill to medium-high heat.

COOK your preferred pasta according to the package instructions. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process. Transfer the chilled pasta to a separate bowl.

BRUSH the corn with olive oil and place it on the grill. Cook for about 2 minutes per side, or until you see those beautiful char marks forming. Once done, remove the corn from the grill and set it aside.

SLICE the kernels off the grilled corn and add them to the bowl.

STIR the corn and the rest of the ingredients until they are coated evenly.

TASTE the salad and season with additional salt or any other desired seasonings.

SERVE the salad immediately or refrigerate it until you're ready to enjoy.
