Mexican Street Corn Cups (esquites) are a popular snack item sold by street food vendors all over Mexico! This antojito is creamy, zesty and slightly spicy!
Ingredients
- 2 tbsp of choice of oil
- 2 cups of corn kernels (or 4 medium ears sweet corn, husks removed)
- 1/4 cup of mayo
- 1/4 cup cotija cheese, crumbled
- Ghost Pepper tamarind sauce (1 teaspoon per cup)
- Lime wedges
Instructions
1- Heat a large skillet over medium-high heat. Add your choice of oil, corn kernels, and cook for 5 minutes, stirring occasionally.
2- Add the corn to individual serving cups. Top each cup with a spoon of mayo, cotija cheese, and one teaspoon of the Ghost Pepper Tamarind sauce. Mix everything together, squeeze some lime and enjoy!
