⁃ Gluten-Free Penne Pasta (boiled, rinsed in cool water, and drained)
- Dressing Ingredients:
⁃ 1 Tbsp Saucy Lips Zesty Cilantro dressing
⁃ 1 Tbsp Roasted Red Pepper hummus (or your preferred hummus)
⁃ 1 Tbsp Organic Extra Virgin Olive Oil
⁃ 1/4 tsp Garlic Granules
⁃ Juice of 1/4 Lemon (~1/2 Tbsp)
⁃ 1/2 tsp Red Pepper Flakes
⁃ 1 tsp Hempseeds
⁃ 1/4 tsp Ground Black Pepper
⁃ 2 Tbsp Red Onion (roughly chopped)
⁃ 1 Tbsp Marinated Artichoke Hearts (quartered/roughly chopped)
⁃ 1 Tbsp Sun-dried Tomatoes (roughly chopped)
⁃ 1 Tbsp Italian Flat Leaf Parsley (roughly chopped)
- In a small bowl, mix together the sauce ingredients, set aside.
- Next, stir together all of the ingredients, until the pasta and veggies are well-coated.
- Can be served over a bed of leafy greens, such as baby kale or spinach.
