    Mediterranean Pasta Salad (Vegan; Gluten-Free)

    This creamy, fresh, and delicious take on pasta salad is a flavorful and quick dish, sure to be a clear crowd winner for your next potluck or luncheon.


    ⁃ Gluten-Free Penne Pasta (boiled, rinsed in cool water, and drained)

    - Dressing Ingredients:

    ⁃ 1 Tbsp Saucy Lips Zesty Cilantro dressing

    ⁃ 1 Tbsp Roasted Red Pepper hummus (or your preferred hummus)

    ⁃ 1 Tbsp Organic Extra Virgin Olive Oil

    ⁃ 1/4 tsp Garlic Granules

    ⁃ Juice of 1/4 Lemon (~1/2 Tbsp)

    ⁃ 1/2 tsp Red Pepper Flakes

    ⁃ 1 tsp Hempseeds

    ⁃ 1/4 tsp Ground Black Pepper

    -  Mix-in’s:

    ⁃ 2 Tbsp Red Onion (roughly chopped)

    ⁃ 1 Tbsp Marinated Artichoke Hearts (quartered/roughly chopped)

    ⁃ 1 Tbsp Sun-dried Tomatoes (roughly chopped)

    ⁃ 1 Tbsp Italian Flat Leaf Parsley (roughly chopped)


    • In a small bowl, mix together the sauce ingredients, set aside.
    • Next, stir together all of the ingredients, until the pasta and veggies are well-coated.
    • Can be served over a bed of leafy greens, such as baby kale or spinach.
    • Enjoy served hot or cold! For a warm version, lightly heat up the dressing mixture, don’t rinse the pasta, and lightly sauté the greens (if applicable).
