Jalapeno & Green Apple & Blueberry Topped Salmon

Recipe type: Dinner 

Serves: 4 (can easily double) 

Ingredients 

  • lb coho salmon 
  • 4-8 tbsp. Jalapeno & Green Apple 
  • 1 cup frozen wild blueberries 
  • 2 cups Mashed cauliflower 
  • 2 cups brussels sprouts, roasted in ghee 

Instructions 

  1. Mix together frozen blueberries and Jalapeno & Green Apple 
  2. Add salt as desired 
  3. Bake salmon on a foil lined sheet for 12-15 minutes 
  4. While salmon is baking heat blueberries in the microwave for 1-2 minutes or until hot 
  5. Top salmon with blueberry sauce and serve with sides
